Start by trimming excess fat from the pork shoulder and cut it into large chunks. Chop the onion, carrots, and celery into bite-sized pieces. Mince the garlic cloves. Peel and cut the potatoes into quarters.

In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the pork chunks and sear on all sides until golden brown, about 5-7 minutes. Remove the pork and set it aside.
