    Prepare the Ingredients

    Start by trimming excess fat from the pork shoulder and cut it into large chunks. Chop the onion, carrots, and celery into bite-sized pieces. Mince the garlic cloves. Peel and cut the potatoes into quarters.

    Sear the Pork

    In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the pork chunks and sear on all sides until golden brown, about 5-7 minutes. Remove the pork and set it aside.

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they start to soften. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Return the seared pork to the pot. Add the thyme, rosemary, bay leaves, salt, and black pepper. Pour in the chicken broth and red wine, scraping up any browned bits from the bottom of the pot.
