Preparation

  1. 1

Let the steaks come to room temperature

Remove the dry-aged Delmonico steaks from the refrigerator and let them sit at room temperature for about 30-45 minutes before cooking. This helps the steaks cook more evenly.

  2. 2

    Dry the steaks

Pat the steaks dry with paper towels to remove any excess moisture. This will help achieve a nice sear.

  3. 3

    Season the steaks

Season the steaks generously on both sides with kosher salt, freshly ground black pepper, garlic powder, and dried thyme. Allow the seasoning to sit on the steaks while you prepare to cook.

Cooking

  1. 4

    Heat the skillet

In a cast-iron skillet or heavy-bottomed pan, heat the vegetable oil over high heat until it shimmers. Ensure the skillet is very hot before adding the steaks.

  2. 5

    Sear the steaks

Carefully place the seasoned Delmonico steaks in the hot skillet. Sear for about 4-5 minutes on one side without moving them to develop a crust.

  3. 6

    Flip and cook the steaks

Flip the steaks and cook for another 4-5 minutes for medium-rare, or until they reach your desired doneness.

  4. 7

    Baste the steaks

During the last minute of cooking, add the unsalted butter, fresh thyme sprigs, and crushed garlic cloves to the skillet. As the butter melts, use a spoon to baste the steaks with the melted butter.

Resting

  1. 8

    Rest the steaks

Once cooked to your liking, remove the steaks from the skillet and transfer them to a cutting board. Let them rest for at least 5-10 minutes. This allows the juices to redistribute within the meat.

  2. 9

    Slice and serve

After resting, slice the steaks against the grain and serve immediately.
