Let the steaks come to room temperature
Remove the dry-aged Delmonico steaks from the refrigerator and let them sit at room temperature for about 30-45 minutes before cooking. This helps the steaks cook more evenly.

Pat the steaks dry with paper towels to remove any excess moisture. This will help achieve a nice sear.

Season the steaks generously on both sides with kosher salt, freshly ground black pepper, garlic powder, and dried thyme. Allow the seasoning to sit on the steaks while you prepare to cook.
