Chop the Vegetables
Dice the carrot, onion, and celery stalks into small, even pieces. Mince the garlic cloves.

Season the Ribs
Pat the beef short ribs dry with paper towels and season generously with salt and black pepper on all sides.
Cooking the Côtes de Nuits

Sear the Ribs
In a large Dutch oven, heat a tablespoon of oil over medium-high heat. Add the short ribs in batches, searing them on all sides until browned (about 3-4 minutes per side). Remove the ribs from the pot and set aside.

Add Stock and Seasonings
Return the seared ribs to the pot. Add the beef stock, thyme, bay leaves, and additional salt and pepper to taste. Bring to a gentle simmer.

Braise the Ribs
Cover the pot and reduce the heat to low. Let the ribs braise for about 2.5 to 3 hours or until the meat is tender and falling off the bone.

Once the ribs are cooked, remove them from the pot and place them on a serving platter. If desired, garnish with freshly chopped parsley. Serve warm with the braising liquid poured over the top.
