    Prepare the Meat

    Trim excess fat from the beef and cut it into 2-inch cubes.

    Chop the Vegetables

    Peel and chop the carrots, onions, and potatoes into bite-sized pieces. Mince the garlic cloves and slice the mushrooms.

Cooking

    Sear the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and sear on all sides until browned, approximately 5-7 minutes.

    Add Vegetables

    Add the chopped onions, garlic, and carrots to the pot. Stir and cook for about 5 minutes until the onions are translucent.

    Deglaze with Wine

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Bring to a simmer.

    Add Remaining Ingredients

    Add the beef broth, potatoes, mushrooms, thyme, bay leaves, salt, and black pepper. Stir well to combine.

    Simmer

    Cover the pot and reduce the heat to low. Let it simmer gently for 1.5 to 2 hours, stirring occasionally, until the beef is tender.

Serving

    Remove the bay leaves before serving. Ladle the Côte Chalonnaise into bowls and enjoy warm.
