    Prepare the Beef

    Using a sharp knife, finely chop the filet mignon into small cubes. Make sure the pieces are uniform for the best texture.

    Mix the Tartare

    In a mixing bowl, combine the chopped beef with the finely chopped shallots, capers, cornichons, Dijon mustard, and Worcestershire sauce. Mix gently with a fork.

    Add Egg Yolks

    Create a small well in the center of the mixture and add the egg yolks. Season with salt and freshly ground black pepper to taste. Mix gently until all ingredients are combined.

Serving

    Plate the Tartare

    Divide the steak tartare mixture onto plates, forming a neat mound. Use a ring mold if you have one for a professional appearance.
