    Sauté the Vegetables

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, diced bell pepper, and minced garlic. Sauté for about 5 minutes, or until the vegetables are soft and the onion is translucent.

Cooking the Chili
