Garlic Rosemary Butter

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Chicken
Rinse the whole chicken under cold water and pat dry with paper towels. Season the inside and outside of the chicken with salt and black pepper.

Roast Garlic
Peel the garlic cloves and set aside. Place them in a small piece of aluminum foil, drizzle with a little olive oil, and wrap them tightly. Roast in the oven for about 30 minutes until soft and fragrant.
Making Garlic Rosemary Butter

Mix Ingredients
In a bowl, combine the softened unsalted butter, roasted garlic (squeeze out from the skins), fresh chopped rosemary, and lemon juice. Mix well until smooth and well incorporated. Set aside.
Cooking the Chicken

Roast the Chicken
Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).

Rest and Serve
Remove the chicken from the oven and let it rest for about 10-15 minutes before carving. Serve warm.
