Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Grouper

    Pat the grouper fillets dry with a paper towel. Drizzle with olive oil and season with salt and black pepper on both sides. Squeeze lemon juice over the fillets and let them marinate while you prepare the glaze.

Glaze Preparation

    Combine Glaze Ingredients

    In a small saucepan, combine honey, soy sauce, minced garlic, grated ginger, red pepper flakes, and rice vinegar. Stir well to combine.

    Cook the Glaze

    Heat the saucepan over medium heat until it begins to simmer. Allow it to simmer for 5-7 minutes until it thickens slightly. Remove from heat and set aside.

Cooking

    Sear the Grouper

    Heat a cast iron skillet over medium-high heat. Once hot, add the grouper fillets skin-side down and sear for 3-4 minutes until the skin is crispy.

    Add the Glaze

    Flip the fillets over and pour the sticky glaze over the top. Transfer the skillet to the preheated oven.

    Roast

    Roast in the oven for 10-15 minutes, or until the grouper is cooked through and flakes easily with a fork.

Serving

    Plate and Serve

    Remove the skillet from the oven. Transfer the grouper to a serving platter, spoon additional glaze over the top, and serve hot with your choice of sides.
