Cooking the Lentils

In a fine mesh strainer, rinse the Beluga lentils under cold running water. Sort through the lentils to remove any debris or small stones.

In a medium saucepan, combine the rinsed lentils and water. Bring to a boil over medium-high heat, then reduce to a simmer. Cover and cook for about 20-25 minutes, or until the lentils are tender but still firm. Drain any excess water if necessary.

While the lentils are cooking, heat olive oil in a large skillet over medium heat. Add the chopped shallot, garlic, diced carrot, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.

Combine Lentils and Vegetables
Once the lentils are cooked, add them to the sautéed vegetables in the skillet. Stir in the vegetable broth, bay leaves, thyme, salt, and black pepper. Bring the mixture to a gentle simmer and let cook for an additional 5-10 minutes, allowing the flavors to meld.
