    Prepare the Yeast

    In a small bowl, combine warm water and sugar. Sprinkle the active dry yeast over the top and allow it to sit for about 5-10 minutes until it becomes frothy.

    In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Cook the Bacon

    In a skillet over medium heat, cook the diced bacon until crispy. Remove from the skillet and let drain on paper towels.

    Sauté the Onions

    In the same skillet, add the sliced onions and sauté until they are soft and translucent, about 10 minutes. Season with salt, pepper, and nutmeg.

    Prepare the Cream Mixture

    In a bowl, combine the heavy cream with a pinch of black pepper. Stir to combine.

    Assemble the Tart

    Preheat the oven to 425°F (220°C). Roll out the dough on a floured surface to fit a baking sheet. Place the rolled-out dough on the baking sheet, then spread the sautéed onions evenly over the surface. Top with crispy bacon and sprinkle grated Gruyere cheese on top. Finally, drizzle the cream mixture over the tart.
