Preparation of Meat

Slicing the Wagyu
Carefully slice each cut of A5 Japanese Wagyu (tenderloin, strip, sirloin cap) into approximately 1/2 inch thick slices. Keep them uniform for even cooking.

Seasoning the Meat
Sprinkle the sliced Wagyu pieces with sea salt and freshly ground black pepper. Let them rest at room temperature for about 20 minutes to absorb the seasoning.

Finishing with Soy Sauce
Once seared, remove the Wagyu from the pan and drizzle with soy sauce for added flavor.

Plating the Dish
Arrange the seared Wagyu slices on a plate. Drizzle with yuzu juice and place a small dollop of wasabi on the side.

Garnishing
Sprinkle chopped chives over the Wagyu and add microgreens for an aesthetic touch.
