Method

Preparation

  1. 1

    Season the Steak

Take the 14oz Dry-Aged Delmonico Steak out of the refrigerator and allow it to sit at room temperature for about 30-60 minutes before cooking. This ensures even cooking. Pat the steak dry with paper towels.

  2. 2

    Apply Seasoning

Generously season both sides of the steak with kosher salt and black pepper. Sprinkle garlic powder evenly across the surface. Add the fresh rosemary on top of the steak for flavor infusion.

Cooking

  1. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat. Allow it to get very hot, which usually takes about 5 minutes.

  2. 4

    Add Olive Oil

Once the pan is hot, add 2 tablespoons of olive oil. Let the oil heat until it shimmers but is not smoking.

  3. 5

    Sear the Steak

Carefully place the seasoned Delmonico steak in the hot pan. Sear for about 4-5 minutes on one side without moving it to develop a nice crust.

  4. 6

    Flip and Cook

Using tongs, flip the steak to the other side and cook for an additional 3-4 minutes for medium-rare (internal temperature of about 135°F). Adjust cooking time to achieve desired doneness.

  5. 7

    Rest the Steak

Remove the steak from the pan and place it on a cutting board. Tent it with foil and let it rest for at least 5-10 minutes to allow juices to redistribute.

Serving

  1. 8

    Slice and Serve

After resting, slice the Delmonico steak against the grain into thick slices. Serve immediately with your choice of sides or sauces.
