Preparation

Prepare the cucumber
Wash the cucumber thoroughly. Peel it if desired, then cut it in half lengthwise. Use a spoon to scoop out the seeds, and then grate the cucumber using a box grater or food processor.

Drain excess moisture
Place the grated cucumber in a clean kitchen towel or cheesecloth, and squeeze out the excess moisture. This will prevent your tzatziki from becoming watery.

Mince the garlic
Peel the garlic cloves and mince them finely. You can also use a garlic press for this step.

Chop the mint
Wash the fresh mint leaves, then finely chop them using a sharp knife.
Mixing

Combine the ingredients
In a medium mixing bowl, combine the Greek yogurt, drained grated cucumber, minced garlic, chopped mint, olive oil, salt, and black pepper.

Mix well
Using a spoon or spatula, mix all the ingredients together until evenly combined. Taste and adjust seasoning if necessary.
Serving

Chill and serve
Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as a dip with pita bread, vegetables, or as a sauce for grilled meats.
