Garlicky Yogurt

Method

Dough Preparation

  1. 1

    Make the Dough

In a large bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

  1. 3

    Prepare the Filling

In a mixing bowl, combine ground beef, finely chopped onion, salt, black pepper, paprika, and chopped parsley. Mix until well combined.

Assembling Manti

  1. 4

    Roll out the Dough

After resting, divide the dough into quarters. Roll out each piece into a thin sheet on a floured surface.

  2. 5

    Cut the Dough

Using a knife or a pizza cutter, cut the dough into 2-inch squares.

  3. 6

    Fill the Manti

Place a small amount of filling (about 1 tsp) in the center of each square. Fold the corners together to form a dumpling, pinching the edges to seal.

Cooking Manti

  1. 7

    Boil the Manti

Bring a large pot of salted water to a boil. Carefully drop the manti into the boiling water and cook for 8-10 minutes or until they float to the surface.

Garlicky Yogurt Preparation

  1. 8

    Prepare the Yogurt Sauce

In a separate bowl, mix the plain yogurt, minced garlic, and salt until smooth.

  2. 9

    Heat the Olive Oil

In a small pan, heat the olive oil over medium heat. Add the paprika and stir for a few seconds until fragrant, then remove from heat.

Serving

  1. 10

    Serve the Manti

Once the manti are cooked, drain and place them on plates. Top with the garlicky yogurt sauce and drizzle the paprika-infused olive oil on top. Serve warm.
