Lamb Kebab Preparation

Prepare the Lamb Mixture
In a large bowl, combine the ground lamb, finely chopped onion, minced garlic, cumin, coriander, paprika, salt, black pepper, and chopped parsley. Mix thoroughly until well combined.

Form the Kebabs
Shape the lamb mixture into kebab skewers or patties, pressing them firmly to hold together. Place them on a tray.

Activate the Yeast
In a bowl, mix warm water and active dry yeast. Allow it to sit for about 5 minutes until frothy.

Make the Dough
In a mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Knead until the dough is smooth and elastic. Cover with a cloth and let it rise for 1 hour.

Shape and Bake the Bread
Preheat the oven to 220°C (428°F). Shape the risen dough into flat rounds and place them on a baking sheet. Bake for 10-12 minutes or until golden brown.

Cook the Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add tomato puree, salt, black pepper, and oregano. Simmer for 15 minutes, stirring occasionally.
