Method
Marinating the Lamb

Prepare the Marinade
In a large bowl, combine the olive oil, minced garlic, lemon juice, ground cumin, paprika, salt, and black pepper. Mix well.

Marinate the Lamb
Add the cubed lamb shoulder to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, preferably overnight.

Rinse the Rice
Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Dress the Salad
Drizzle with lemon juice and olive oil, then sprinkle with salt and black pepper. Toss to combine.
Grilling the Kebabs

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.

Thread the marinated lamb onto the skewers, leaving a little space between each piece for even cooking.
