Preparing the Kadayif

Preheat the Oven
Preheat your oven to 180°C (350°F).

Prepare the Dough
Melt the unsalted butter in a small saucepan. In a large bowl, take the shredded filo dough and gently separate it using your fingers to prevent clumping.

Layer the Kadayif
In a greased baking dish, place half of the buttered shredded dough evenly at the bottom. Press it down gently to form a base.

Add Pistachios
Spread the finely chopped pistachios evenly over the dough layer.

Top with Remaining Dough
Cover the pistachios with the remaining shredded dough. Press down gently to compact the layers.
Baking the Kadayif

Bake in Oven
Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown.
Preparing the Syrup

Combine Ingredients
In a saucepan, combine the granulated sugar and water. Stir over medium heat until the sugar dissolves.

Add Lemon Juice
Once the sugar has dissolved, add the lemon juice and bring the mixture to a boil.

Simmer the Syrup
Reduce the heat and let the syrup simmer for about 10 minutes. Remove from heat and stir in the rose water.
Final Assembly

Combine Kadayif and Syrup
Once the kadayif is baked, remove it from the oven and pour the hot syrup evenly over the hot kadayif. Let it soak for at least 30 minutes before serving.

Serve
Cut into squares or diamond shapes and serve warm or at room temperature.
