    Wash and Cut Potatoes

    Wash the Russet potatoes thoroughly under cold water to remove dirt. Cut each potato into even sticks, approximately 1/4 inch thick.

    Soak Potatoes

    Place the cut potato sticks into a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps in achieving crispiness.

Cooking

    Heat the Oil

    In a large deep pot or a deep fryer, add the vegetable oil and heat it to 350°F (175°C). Use a thermometer to check the temperature for accuracy.

    Dry and Fry

    Once the oil is hot, drain the soaked potatoes and pat them dry with paper towels. Fry the potatoes in batches, without overcrowding the pot, for about 5-6 minutes or until they are golden brown and crispy.

    Drain Excess Oil

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil.

    Season the Fries

    While the fries are still hot, sprinkle them with salt and black pepper to taste. Toss gently to ensure even seasoning.

    Serve the crispy French fries hot, either plain or with your favorite dipping sauces.
