Prepare the Mint
Rinse the fresh mint leaves and gently pat them dry. Chop them coarsely.

Toast the Pita Bread
Preheat your oven to 375°F (190°C). Cut the pita bread into triangles and place them on a baking sheet. Bake for about 10 minutes or until golden and crispy.
Dressing

Mix the Dressing
In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper until well combined.
Assembly

Combine Ingredients
In a large salad bowl, combine the chopped lettuce, tomatoes, cucumber, onion, red cabbage, and mint. Toss gently to mix.

Add Dressing
Pour the dressing over the salad and toss gently to coat all the ingredients.

Add Feta and Pita
Crumble feta cheese over the top of the salad and add the toasted pita bread pieces. Toss lightly to combine.
