Method

Prepare Falafel

    Soak Chickpeas (if using dry)

    If using dried chickpeas, soak them in water overnight. Drain and rinse before use.

    Blend Ingredients

    In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, black pepper, and baking powder. Pulse until a coarse mixture forms.

    Add Flour

    Transfer the mixture to a bowl and add all-purpose flour. Mix until well combined. If too wet, add more flour as needed.

    Form Balls

    Shape the mixture into small balls or patties, about 1-2 inches in diameter.

    Heat Oil

    In a deep frying pan, heat vegetable oil over medium heat until hot.

    Fry Falafel

    Carefully drop the falafel balls into the hot oil. Fry for 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Prepare Rice

    Rinse Rice

    Rinse the basmati rice under cold water until the water runs clear.

    Cook Rice

    In a saucepan, combine rinsed rice, water, and salt. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until rice is cooked and water is absorbed.

Prepare Salad

    Chop Vegetables

    Dice the cucumber, chop the tomatoes, and thinly slice the red onion.

    Combine Salad Ingredients

    In a bowl, combine chopped cucumber, tomatoes, red onion, lemon juice, olive oil, salt, and black pepper. Toss well to combine.
