Falafel Preparation

Prepare the Chickpeas
If using dried chickpeas, soak them in water overnight and then cook until tender. If using canned, drain and rinse them thoroughly.

Add Flour
Transfer the mixture to a bowl and add all-purpose flour. Mix well until it holds together. If the mixture is too wet, add a bit more flour.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to help the mixture firm up.

Form the Falafel Balls
After chilling, scoop out portions of the mixture and roll them into balls or patties, about 1-2 inches in diameter.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until hot (around 350°F or 175°C).

Fry the Falafel
Carefully drop the falafel balls into the hot oil in batches, avoiding overcrowding. Fry for about 3-4 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.
Tahini Sauce Preparation

Mix the Ingredients
In a small bowl, combine tahini, lemon juice, minced garlic, and water. Whisk until smooth. Adjust the consistency with more water if needed.

Add salt to taste and mix well.
