Preparation of Falafel Mixture

    Soaking Chickpeas

    Rinse the dried chickpeas under cold water. Place them in a bowl and cover with water, allowing them to soak overnight (or for at least 8 hours).

    Blending Ingredients

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms, but do not over-blend.

    Adding Flour

    Transfer the mixture to a bowl and add the flour. Mix well to combine, adjusting the flour as necessary to bind the mixture together.

    Chilling Mixture

    Cover the bowl with plastic wrap and refrigerate for at least 1 hour to firm up the mixture.

Frying Falafel

    Heating Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Forming Patties

    Using your hands or a scoop, form the chickpea mixture into small patties or balls, about the size of a golf ball.

    Frying

    Carefully add the formed patties to the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serving Falafel

    Assembling the Wrap

    To serve, place a few falafel patties inside a piece of pita bread. Top with shredded lettuce, diced tomato, cucumber slices, and drizzle with tahini sauce.
