Marinated Chicken Preparation

Marinate the Chicken
In a large bowl, combine the olive oil, Greek yogurt, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice. Mix well until smooth.

Add the boneless chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Cooking the Chicken

Cook the Chicken
Preheat your grill or rotisserie. Cook the marinated chicken on medium-high heat for about 15-20 minutes, turning occasionally until the internal temperature reaches 75°C (165°F).

Once cooked, let the chicken rest for a few minutes, then thinly slice it against the grain.

Cook the Rice
Rinse the basmati rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until water is absorbed.
