Preparation of Nuts and Filo

    Prepare the Nut Filling

    In a food processor, combine walnuts, almonds, and ground cinnamon. Pulse until finely chopped but not a paste. Set aside.

    Prepare the Filo Pastry

    Thaw the filo pastry sheets according to package instructions. Preheat the oven to 180°C (350°F). Melt the unsalted butter in a small saucepan.

Assembling Baklava

    Layer the Filo Pastry

    Grease a 9x13 inch baking dish with some melted butter. Lay one sheet of filo pastry in the dish and brush it lightly with melted butter. Repeat this process with about 8 sheets, brushing each layer with butter.

    Add the Nut Filling

    Spread half of the nut mixture evenly over the layered filo. Continue layering 4 more sheets of filo, brushing each with butter, then add the remaining nut filling.

    Final Layering

    Top with another 8 layers of filo pastry, brushing each with melted butter. Use a sharp knife to cut the baklava into diamond or square shapes.

Baking Baklava

    Bake the Baklava

    Bake in preheated oven for about 45-50 minutes or until golden brown and crisp.

Making the Syrup

    Prepare the Syrup

    While the baklava is baking, combine sugar, water, honey, vanilla extract, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes until slightly thickened.

    Soak the Baklava

    Once the baklava is out of the oven, immediately pour the hot syrup evenly over the baklava. Allow it to soak in for several hours or overnight before serving.
