Filling Preparation

    Prepare Feta and Parsley Filling

    In a bowl, combine crumbled feta cheese and chopped parsley. Mix well and set aside.

    Prepare Ground Lamb Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until translucent. Add ground lamb, salt, and black pepper. Cook until the lamb is browned and fully cooked. Remove from heat and let cool.

    Prepare Spinach Filling

    In the same skillet, add a little more olive oil if needed, then add fresh spinach. Sauté until wilted. Season with salt and black pepper. Let cool.

Borek Assembly and Baking

    Prepare Filo Dough

    Preheat your oven to 180°C (350°F). Prepare a baking sheet lined with parchment paper. Unroll the filo dough and cover it with a damp cloth to prevent it from drying out.

    Assemble Borek

    Take one sheet of filo dough, brush it lightly with melted butter. Place a second sheet on top and brush again. Repeat this for about 4-5 sheets. Add your choice of filling (feta and parsley, ground lamb, or sautéed spinach) along one edge of the dough. Roll it up from the filled edge to form a log, then coil it into a spiral shape and place it on the prepared baking sheet.

    Final Touch

    Brush the top of the borek with more melted butter and sprinkle sesame seeds on top.

    Bake

    Bake in the preheated oven for 25-30 minutes or until golden and crispy. Remove from the oven and let cool slightly before serving.
