    Prepare the Eggplant

    Preheat your grill or oven to medium-high heat. Cut the eggplants in half lengthwise and score the flesh in a crisscross pattern with a knife. This helps the eggplant cook evenly and absorb flavors.

    Grill the Eggplant

    Place the eggplant halves cut-side down on the grill. Grill for about 15-20 minutes, or until the skins are charred and the flesh is soft. If using an oven, place them on a baking sheet and roast for 30-40 minutes at 400°F (200°C).

    Scoop the Flesh

    Once cooked, let the eggplants cool slightly. Scoop out the flesh with a spoon and place it in a mixing bowl.

Making the Baba Ganoush

    Combine Ingredients

    To the bowl with the eggplant flesh, add tahini, minced garlic, cumin, lemon juice, and olive oil. Use a fork or a food processor to blend until smooth and creamy. Adjust the texture with a little water if needed.

    Season to Taste

    Taste the mixture and season with salt and pepper to your liking. You can also add more lemon juice or tahini based on your preference.

    Garnish and Serve

    Transfer the baba ganoush to a serving dish. Drizzle with additional olive oil and sprinkle with paprika and chopped fresh parsley if desired. Serve with pita bread, crackers, or fresh vegetables.
