Method

Kebab Preparation

  1. 1

    Prepare the Kebab Mixture

In a large bowl, combine ground lamb, ground beef, grated onion, minced garlic, red pepper flakes, cumin, salt, black pepper, and chopped parsley. Mix thoroughly using your hands until well combined.

  2. 2

    Shape the Kebabs

Divide the mixture into equal portions and mold each portion around a skewer, shaping it into a long, flat kebab.

  3. 3

    Grill the Kebabs

Preheat the grill to medium-high heat. Grill the kebabs for about 10-12 minutes, turning occasionally until fully cooked and browned.

Homemade Bread

  1. 4

    Make the Dough

In a bowl, mix warm water, sugar, and yeast. Let sit for 10 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Knead until smooth.

  2. 5

    Let the Dough Rise

Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

  3. 6

    Shape and Bake the Bread

Preheat the oven to 220°C (428°F). Punch down the risen dough and shape it into a round or oval flatbread. Place on a baking sheet and bake for 15-20 minutes until golden.

Tomato Sauce and Butter

  1. 7

    Prepare the Sauce

In a saucepan, heat tomato sauce over medium heat. Allow it to simmer for about 5-7 minutes. In a separate small pan, melt butter until bubbly.

  2. 8

    Combine and Serve

Pour the melted butter over the tomato sauce and stir well. Spoon this mixture over the grilled kebabs.

Homemade Yogurt

  1. 9

    Heat the Milk

In a saucepan, heat the milk over medium heat until it reaches 85°C (185°F). Remove from heat and allow to cool to about 43°C (110°F).

  2. 10

    Inoculate the Milk

Stir in the plain yogurt into the warm milk. Cover the container with a lid or a cloth and let it sit in a warm place for 6-12 hours until thickened.
