Prepare Kebab Mixture

Combine Ingredients
In a large bowl, combine ground lamb, finely chopped red bell pepper, grated onion, minced garlic, paprika, cumin, salt, black pepper, red pepper flakes, and olive oil. Mix well until all ingredients are evenly combined.

Divide the mixture into equal portions and mold each portion around a skewer, shaping it into a long, flat kebab.

Rinse the long grain rice under cold water until the water runs clear.

In a medium saucepan, combine rinsed rice, water, and salt. Bring to a boil over high heat, then reduce to low, cover, and simmer for 15-18 minutes until the rice is tender and the water is absorbed.
Prepare Salad

In a bowl, combine diced tomatoes, diced cucumber, and shredded lettuce.

In a small bowl, whisk together lemon juice, olive oil, and salt. Drizzle over the salad and toss to combine.
