Method

Preparation

  1. 1

    Prepare the Meat Mixture

In a large mixing bowl, combine the ground lamb, finely chopped onion, minced garlic, chopped parsley, paprika, cumin, red pepper flakes, salt, and black pepper. Mix the ingredients thoroughly using your hands or a spoon until well combined.

  2. 2

    Shape the Kebabs

Divide the meat mixture into equal portions (about 100 grams each). Shape each portion around a skewer, pressing firmly to ensure it adheres well. Repeat until all the mixture is used.

  3. 3

    Marinate

Drizzle the shaped kebabs with olive oil, ensuring they're lightly coated. Let them marinate for at least 30 minutes at room temperature or refrigerate for up to 2 hours for enhanced flavor.

Cooking

  1. 4

    Preheat the Grill

Preheat your grill or grill pan to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

  2. 5

    Grill the Kebabs

Once the grill is hot, place the kebabs on the grates. Cook for 4-5 minutes on each side, or until they are nicely browned and cooked through (internal temperature of 70°C/160°F).

  3. 6

    Rest and Serve

Remove the kebabs from the grill and let them rest for a few minutes before serving. Serve with pita bread, fresh salad, or yogurt sauce if desired.
