Prepare Veggie Patty

    Cook Beans

    In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Mix Ingredients

    Add corn, bell pepper, oats, chopped onion, minced garlic, cumin, chili powder, salt, and pepper to the mashed beans. Mix well.

    Add Binding Agent

    Add the egg to the mixture to help bind the ingredients together. If you're making it vegan, you can substitute the egg with a flax egg (1 tbsp flaxseed meal + 2.5 tbsp water).

    Form Patties

    Divide the mixture into 4 equal portions and form each portion into a patty.

    Cook Patties

    Heat olive oil in a grill or skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and heated through.

Assemble Burgers

    Prepare Buns

    Toast the burger buns on the grill or in a toaster until lightly golden.

    Layer Ingredients

    On the bottom half of each bun, place a lettuce leaf, followed by a cooked veggie patty, a slice of tomato, and some sliced onion.

    Top with your preferred condiments like ketchup or mustard.

    Place the top half of the bun on each assembled burger and serve immediately.
