Cook the Meat
In a large skillet over medium heat, add 1 lb of ground beef or chicken. Cook until browned and fully cooked, about 7-10 minutes.

Add Seasoning
Once the meat is cooked, drain excess fat if using beef. Stir in 2 tablespoons of taco seasoning and 1/4 cup of water. Reduce heat to low and simmer for 5 minutes until thickened.

Prepare Toppings
While the meat is cooking, chop 2 cups of lettuce and dice 1 cup of tomatoes. Set aside.

Warm Tortillas
Warm the 8 soft flour tortillas in a microwave for about 30 seconds or until soft. For hard corn tortilla shells, bake according to package instructions until crispy.
Serve and Enjoy

Assemble the Taco Bar
Set out the cooked meat, chopped lettuce, diced tomatoes, shredded Colby cheese, soft tortillas, and hard corn shells on a table.

Add Sides
Place 1 cup of refried beans, 2 cups of Spanish rice, 1 cup of hot salsa, 1 cup of mild salsa, and a bag of tortilla chips alongside the taco ingredients.

Let everyone build their own tacos by layering their preferred ingredients onto the tortillas or shells.
