Enchiladas Preparation

    Cook the Meat

    In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent. Stir in the minced garlic, cumin, chili powder, salt, and pepper. Add the ground beef or chicken, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.

    Assemble Enchiladas

    Preheat your oven to 350°F (175°C). In a 9x13 inch baking dish, spread a thin layer of enchilada sauce on the bottom. Fill each tortilla with a portion of the meat mixture, sprinkle with shredded Colby cheese, and roll tightly. Place the filled tortillas seam side down in the baking dish.

    Add Sauce and Cheese

    Once all tortillas are in the dish, pour the remaining enchilada sauce over the top, ensuring all tortillas are covered. Sprinkle the remaining Colby cheese on top.

    Bake

    Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

    Prepare Refried Beans

    Heat the refried beans in a small saucepan over medium heat until warmed through, stirring occasionally.

    Prepare Spanish Rice

    Cook Spanish rice according to package instructions. Typically, you will need to simmer it in water or broth until the rice is tender.

    Serve Salsas and Chips

    Place the hot salsa and mild salsa in small bowls. Open the bag of tortilla chips and place them in a serving dish.
