    Prepare the Grilled Chicken

    Grill the chicken breast until fully cooked (internal temperature reaches 165°F). Let it rest for 5 minutes before slicing it into strips.

    Sauté the Vegetables

    In a skillet over medium heat, add a tablespoon of vegetable oil. Add sliced onions, red bell peppers, and green bell peppers. Sauté until tender, about 5-7 minutes. Remove from heat.

    Assemble the Salad

    In a large bowl, add mixed greens as the base. Top with grilled chicken, sautéed vegetables, diced avocado, diced tomatoes, and sprinkle the shredded Colby and Monterey Jack cheese on top. Drizzle with salsa or your choice of dressing.

    Stack the flour tortillas and cut them into triangle-shaped wedges.
