Wash and peel the Russet potatoes. Cut them into thick strips for fries.

In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels. Season with salt.

Make the Roux
In a saucepan over medium heat, melt the unsalted butter. Whisk in the flour and cook for about 2 minutes until it turns light brown.

Gradually whisk in the beef or chicken stock, ensuring there are no lumps. Bring the mixture to a simmer.

Stir in the soy sauce and black pepper. Let the gravy simmer for about 5-10 minutes until it thickens to your desired consistency.
