Preparation of Base Ingredients

    Cook the Rice

    In a pot, add 2 cups of water and bring to a boil. Add 1 cup of rice, cover, and simmer for 18-20 minutes until water is absorbed. Fluff with a fork.

    Heat the Refried Beans

    In a small saucepan, heat 2 cups of refried beans over medium heat, stirring occasionally until heated through (about 5-7 minutes).

    Prepare Chicken Fajitas

    Slice 1 bell pepper and 1 onion, and sauté in a pan over medium heat with 1 tablespoon of oil until softened. Add 1 pound of sliced chicken breast and cook until no longer pink (about 7-10 minutes). Season with salt, pepper, and fajita seasoning to taste.

    Prepare Beef Enchiladas

    In a separate pan, cook 1 pound of ground beef until browned. Drain excess fat and mix in 1 cup of enchilada sauce. Fill corn tortillas with beef mixture, roll up, and place in a baking dish. Top with remaining enchilada sauce and sprinkle with 1 cup of shredded cheese. Bake at 350°F (175°C) for 20 minutes.

    Assemble Combo Platter

    On a large plate, add a serving of cooked rice and refried beans. Place the chicken fajitas and beef enchiladas next to the rice and beans. Garnish with chopped cilantro, sliced avocado, and lime wedges if desired.
