Method

Preparing the Cake

  1. 1

    Melt Chocolate and Butter

In a medium saucepan, melt the unsweetened chocolate and unsalted butter together over low heat, stirring frequently until smooth. Remove from heat and let it cool slightly.

  2. 2

    Mix Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale, about 3 minutes.

  3. 3

    Combine Mixtures

Add the melted chocolate mixture and vanilla extract to the egg mixture. Stir until well combined.

  4. 4

    Add Flour

Gently fold in the all-purpose flour until just combined, being careful not to overmix.

  5. 5

    Prepare Ramekins

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Serving the Cake

  1. 8

    Cool and Serve

Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen, then invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on the side.
