Cook Shredded Pork
In a slow cooker, add the pork shoulder and cover with taco seasoning. Cook on low for 8 hours or until the pork is fork-tender. Shred the pork using two forks.
Making the Homemade Burrito Sauce

Combine Ingredients
In a saucepan over medium heat, combine tomato sauce, chili powder, garlic powder, onion powder, cumin, salt, and pepper. Stir until well blended and bring to a simmer. Cook for 10 minutes, stirring occasionally.
Assembling the Burritos

Prepare Tortillas
Warm the flour tortillas in a dry skillet or in the microwave for about 20 seconds until soft and pliable.

Fill the Burritos
Lay a tortilla flat and add a scoop of your choice of meat, some shredded lettuce, diced tomatoes, and a generous drizzle of homemade burrito sauce. Top with colby cheese.

Roll the Burrito
Fold the sides of the tortilla inwards, then roll from the bottom up to enclose the filling. Repeat with remaining tortillas.

Prepare Sides
Heat the refried beans and Spanish rice as per package instructions. Serve alongside the burritos with hot salsa, mild salsa, and tortilla chips.
