Burrito Filling Preparation

Cook the Meat
In a large skillet over medium heat, cook the ground beef, chicken asado, shredded beef, and shredded pork until fully cooked (about 10-15 minutes). Drain excess fat if necessary.

Prepare the Filling
Once the meats are cooked, mix in the shredded lettuce and diced tomatoes. Stir until well combined.

Make the Sauce
In a saucepan, combine the tomato sauce, chili powder, cumin, garlic powder, salt, pepper, and water. Stir and bring to a simmer over medium heat for about 10 minutes until thickened.
Assembling the Burritos

Wrap the Burritos
On a large flour tortilla, add a generous portion of the meat and vegetable mixture. Roll the tortilla tightly, folding in the sides to secure the filling.

Prepare for Baking
Place the wrapped burritos seam-side down in a baking dish. Pour the burrito sauce evenly over the top.

Sprinkle the shredded Colby cheese over the sauced burritos.
