    Prepare the Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine the quinoa with 300 ml of vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until the quinoa is fluffy. Remove from heat and let it sit for 5 minutes.

    Prepare the Chicken

    While the quinoa is cooking, season the chicken breast with salt, black pepper, and fresh thyme. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and let it rest.

Cooking the Vegetables

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Add the sliced wild mushrooms, asparagus, and cherry tomatoes. Cook for about 5-7 minutes until the vegetables are tender. Add spinach and cook for an additional 2 minutes until wilted.

Assembly

    Combine and Serve
