    Marinate the Rabbit

    In a large bowl, combine the rabbit meat, minced garlic, olive oil, chopped rosemary, lemon juice, salt, and black pepper. Mix well to ensure the rabbit is evenly coated. Cover and refrigerate for at least 2 hours or overnight for best flavor.

    Sauté the Vegetables

    In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the sliced onion, chopped celery, and carrots. Sauté until the onions become translucent, about 5 minutes. Then add the diced potatoes and continue to sauté for another 5 minutes.

    Brown the Rabbit

    Remove the marinated rabbit from the refrigerator. In the same pot, add another tablespoon of olive oil if necessary, and increase the heat to medium-high. Add the rabbit pieces and brown them on all sides, about 8-10 minutes.

    Pour in the chicken broth, add the bay leaves and dried thyme. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the rabbit is tender.
