    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Prepare the Pancetta

    While the pasta is cooking, heat a large skillet over medium heat. Add the olive oil and pancetta to the skillet. Cook until the pancetta is crispy and golden, about 5-7 minutes. Remove from heat and set aside.

    Mix the Egg and Cheese

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

    Combine Ingredients

    Once the spaghetti is cooked, reserve about 1 cup of the pasta cooking water and then drain the pasta. Immediately add the hot spaghetti to the skillet with the pancetta. Toss to combine, allowing the heat from the pasta to slightly cook the eggs.

    Finish the Carbonara

    Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

    Serve

    Serve the spaghetti carbonara immediately with additional grated Parmesan cheese and freshly ground black pepper on top.
