Dough Preparation

Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough
In a large bowl, mix the flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.

Shape the Knots
Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a rope about 8 inches long, then tie it into a knot.

Second Rise
Place the knots on a greased baking sheet. Cover with a cloth and let rise for another 30 minutes.

Bake the Knots
Preheat the oven to 375°F (190°C). Bake the knots for 15-20 minutes until golden brown.
