Preparation
Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes.
Prepare the Pancetta
While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until it is crispy and golden, about 5-7 minutes. Remove from heat and set aside.
Mix the Sauce
In a mixing bowl, whisk together eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.
Combine
Combine Pasta and Pancetta
Once the spaghetti is cooked, reserve about 1 cup of the pasta cooking water and then drain the pasta. Quickly add the hot spaghetti to the skillet with the pancetta and toss to combine.
Season
Taste and season with salt and more black pepper if needed.
Serve
Garnish and Serve
Serve the pasta carbonara immediately, garnished with chopped fresh parsley and additional grated Parmesan cheese if desired.
