Preparation

1

Cook the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes.

2

Prepare the Pancetta

While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until it is crispy and golden, about 5-7 minutes. Remove from heat and set aside.

3

Mix the Sauce

In a mixing bowl, whisk together eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Combine

4

Combine Pasta and Pancetta

Once the spaghetti is cooked, reserve about 1 cup of the pasta cooking water and then drain the pasta. Quickly add the hot spaghetti to the skillet with the pancetta and toss to combine.

5

Create the Sauce

Remove the skillet from heat and immediately pour the egg and cheese mixture over the hot pasta. Toss quickly to combine, adding reserved pasta water a little at a time until the sauce reaches your desired creaminess.

6

Season

Taste and season with salt and more black pepper if needed.

Serve

7

Garnish and Serve

Serve the pasta carbonara immediately, garnished with chopped fresh parsley and additional grated Parmesan cheese if desired.
