Prepare Panna Cotta Base

Bloom the Gelatin
In a small bowl, combine the gelatin powder and water. Let it sit for about 5-10 minutes until it becomes thick and gelatinous.

Heat Cream Mixture
In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir continuously until the sugar dissolves and the mixture is warm, but do not bring it to a boil.

Add Gelatin
Remove the saucepan from heat and stir in the bloomed gelatin and vanilla extract until fully dissolved.

Pour and Chill
Pour the mixture into serving glasses or molds. Allow to cool to room temperature, then refrigerate for at least 4 hours or until set.
Prepare Berry Topping

Mix Berries
In a bowl, combine the mixed berries, granulated sugar, and lemon juice. Gently toss to coat the berries evenly and let sit for about 15 minutes to macerate.

Serve
Once the panna cotta has set, top each serving with the macerated berry mixture just before serving.
