Heat Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

Whisk Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cook the Custard
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.

Add Vanilla
Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature.

Once the custard base is cooled, mix in your choice of flavored fruit puree or melted chocolate until well combined.

Cover the mixture and chill in the refrigerator for at least 2 hours or overnight for best flavor.

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the gelato to an airtight container and freeze for at least 4 hours to firm up before serving.
