Preparing the Marinara Sauce

    Cook the Garlic

    In a saucepan over medium heat, add 2 tablespoons of olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Add the canned crushed tomatoes, oregano, salt, and black pepper to the saucepan. Stir to combine.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

    Finish with Basil

    Once thickened, stir in the chopped fresh basil. Remove from heat and set aside.

Preparing the Calamari

    Prep the Calamari

    Rinse the calamari rings under cold water and pat dry with paper towels.

    Prepare the Breading Station

    In a shallow bowl, mix together the flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.

    Bread the Calamari

    Dip each calamari ring first into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs. Ensure each piece is well coated.

    Heat the Oil

    In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the breaded calamari rings to the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes until golden brown and crispy.

    Drain and Serve

    Remove the fried calamari with a slotted spoon and drain on paper towels. Serve hot with marinara sauce.
