Method
Cook the Pasta

Boil Water
In a large pot, bring 4 quarts of water to a rolling boil. Add a generous amount of salt to the water.

Cook Fettuccine
Add the fettuccine pasta to the boiling water. Cook according to package instructions until al dente, usually about 10-12 minutes.

Drain Pasta
Once cooked, drain the pasta and set aside. Do not rinse.
Prepare the Chicken

Season Chicken
Rub the chicken breasts with olive oil, salt, and black pepper on both sides.

Grill Chicken
Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes.

Slice Chicken
Once rested, slice the grilled chicken into strips.
Make the Alfredo Sauce

Melt Butter
In a large skillet over medium heat, melt 1 cup of butter.

Add Cream and Cheese
Slowly pour in the heavy cream, stirring constantly. Gradually mix in the grated Parmesan cheese until melted and smooth.

Season Sauce
Stir in nutmeg, and season with salt and black pepper to taste. Allow the sauce to simmer for 4-5 minutes until slightly thickened.
Combine and Serve

Combine Pasta and Sauce
Add the drained fettuccine pasta to the skillet with the Alfredo sauce. Toss well to coat the pasta in the sauce.

Add Chicken
Top the pasta with the sliced grilled chicken and gently toss again to combine.

Serve the Chicken Alfredo hot, garnished with chopped fresh parsley.
