Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt.

Incorporate Butter
Cut in the unsalted butter until the mixture resembles coarse crumbs.

Add Liquid Ingredients
Stir in the egg yolk, white wine or vinegar, and water until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5 minutes until smooth.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Prepare the Filling
In a medium bowl, mix together the ricotta cheese, powdered sugar, vanilla extract, chocolate chips, and cinnamon until well combined.

Chill the Filling
Cover the filling and refrigerate while preparing the pastry shells.
Frying

Roll Out the Dough
On a floured surface, roll out the chilled dough to about 1/8 inch thickness.

Cut and Shape
Cut the dough into circles (about 4 inches in diameter) and wrap them around cannoli tubes, sealing the edges with a bit of water.

Heat Oil
In a deep frying pan, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Cannoli
Carefully drop the cannoli shells into the hot oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Fill the Cannoli
Once the shells have cooled, use a piping bag to fill them with the ricotta filling.

Dust with powdered sugar and serve immediately.
