Calamari Fritti

    Prepare the Calamari

    In a large bowl, combine the cleaned and cut calamari with the salt, black pepper, paprika, and garlic powder. Toss to coat evenly.

    Prepare the Breading

    In another bowl, mix the all-purpose flour and cornstarch. In a separate bowl, beat the eggs. Set up a breading station with the seasoned calamari, the egg mixture, and the flour mixture.

    Bread the Calamari

    Dip each piece of seasoned calamari into the egg mixture, allowing excess to drip off, then coat it in the flour mixture. Place the breaded calamari on a baking sheet.

    Heat the Oil

    In a deep saucepan or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Fry the calamari in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Marinara Sauce

    Cook the Garlic

    In a saucepan over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

    Add Tomatoes and Seasonings

    Add the crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes. Stir well to combine.

    Simmer the Sauce

    Bring the mixture to a simmer, then reduce the heat to low. Allow it to simmer for about 15-20 minutes, stirring occasionally, until slightly thickened.

    Serve

    Once the sauce has thickened, remove from heat and garnish with fresh chopped basil. Serve hot alongside the crispy fried calamari.
