1. Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
2. Add Tomatoes and Broth
Stir in the canned tomatoes (with their juice) and the vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes.
3. Blend the Soup
Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth.
4. Add Cream and Season
Stir in the heavy cream, salt, black pepper, and chopped basil. Heat through for another 5 minutes, but do not boil.
